I made these cookies when my toddler son was napping, it took about 5
minutes to mix and almost an hour to set (too long). On seeing them, my
husband declared that I could definitely survive in the bush if I could bake without an oven. I hope you enjoy these as much as my family has, my son shouts "mama, cookie" at least twice a day.
Ingredients
1 3/4 C sugar
3C instant oats
1/2C milk
1/2C smooth peanut butter
1/2C butter/margarine
1/4C cocoa
1tsp vanilla essence
Method
1. Mix butter, sugar, milk and cocoa powder in a saucepan and boil for 2mins.
2. Remove from heat and add oats, peanut butter and vanilla.
3. Drop spoonfuls onto a baking sheet lined with wax paper and let cool and set until hard, about an hour. Store in an airtight container in a cool place (mine are in the fridge).
* NOTE* I found these a bit on the sweet side so if you don't particularly like them sweet, you can substitute the 1/4C of sugar with another 1/4C peanut butter.
